Smoked Gouda and Broccoli Flatbreads

There are equal amounts of cheese and broccoli on this flatbread, but it’s the smoked Gouda that grabs your attention. These are super speedy with the help of store-bought flatbread, naan or pocketless pita, but because the breads vary in size, adjust the quantity of topping to cover yours. Feel free to adapt with what you have: Swap out Gouda for another melting cheese like Cheddar or fontina; and for the broccoli, substitute spinach, kale, thinly sliced brussels sprouts or another quick-cooking vegetable.

Ingredients

  • 8 ounces smoked Gouda, grated on the small holes of a box grater (about 2 cups)
  • 8 ounces broccoli stems and florets, coarsely chopped (about 3 cups)
  • 3 scallions, thinly sliced
  • 1 tablespoon extra-virgin olive oil
  •  Kosher salt and black pepper
  • 4 flatbread, naan or pocketless pita (roughly 8-inch diameter, store-bought or homemade)

Instructions

Step 1: Heat the oven to 450 degrees and place a rack in the lower and upper third of the oven. In a large bowl, combine the Gouda, broccoli, scallions and oil. Season with salt and pepper, and stir to combine. 

Step 2: Place the flatbread on two baking sheets, then top evenly with the cheese mixture. Roast, rotating pans halfway through, until the bread is crisp and the cheese is melted and browned in spots, 8 to 10 minutes.

In addition to our most popular Vegetable and Fruit Shares, the FDC offers a variety of Special Shares as add-ons. If you didn’t sign up for a Special Share, we have limited numbers of certain shares available. Simply email Marion with the name of the share you are interested in adding and she will communicate directly with you on any necessary details.


Local Cheese Share – Farmstead Gouda – Thomas Farm, Sunderland, MA – Right next door to our main grower in Sunderland lives a herd of crazy goats! Thomas Farm owners Laurie & Jim make Farmstead Gouda, Curds and more. Cheese shares  receive a block of nibble worthy, golden Goat Gouda.

Organic Cultured Mushroom Share – Lion’s Mane – Mycoterra Farm, South Deerfield, MA. – Keep in the paper bag the mushrooms are delivered in. Use within the week – these mushrooms are meant to be cooked. The link will give you an idea of how to cook them. If the mushrooms dry out a little, use water to reconstitute them. Pasta Share! – Month 1 of 5! – Valicenti Pasta Farm brings us beautiful fresh pasta. Pick from a selection of flavored and plain pastas. Use within 10 days, or freeze to maintain quality.

Daily Bread Share – Regular Option & Whole Grain Option –  a selection from A&J King Artisan Bakers, Iggy’s Bread of the World, and Nashoba Brook Bakery’s breads. Use tonight, or freeze for future use. These bakery breads have no preservatives or dough conditioners, so they are meant for daily eating. Slice a whole loaf before freezing to easily take out a few slices at a time.
Please be mindful you are selecting bread from your selected share type. The Regular Bread Share & The Whole Grain Bread share are not interchangeable!

Pastured Egg Share –  From Julie’s Happy Hens, Mont Vernon, NH. Store in main refrigerator (not on the fridge door.) If choosing to hard boil – steam rather than boil. 15 minutes to cook, and stop the cooking process with an ice bath. The steaming allows fresh eggs to peel easily.

A slot may be selected ahead of time for each week, or you may sign up when you know your weeks schedule. Please plant to arrive within your 15 minute selected time. Unsure of your weekly schedule? Opt to sign up weekly. The links remain the same!
We have decided to stick with timed arrivals in case we need to maintain distance during surges. We also find the traffic flows more calmly & evenly with timed arrivals, and we find folks tend to remember to pick up with the added action of signing up for a time slot.

*Early bird.  In Melrose we are opting to have a limited number of slots for the first 15 minutes. Due to unforeseen trucking challenges, the Melrose location is apt to open a few minutes late. We hope this makes for a smooth opening for all.   PS. If you choose an early bird slot, you still may have to wait, or help set up!
